How to make good olive oil

Eliá oils are produced only with olives extracted directly from the tree at the time of veraison - transition stage when the fruits acquire a reddish tint before ripening -. At this time, the polyphenol content, responsible for fresh aromas and fruity flavors, reaches its height . The olives are grinded within 24 hours to avoid alterations in the oil quality after which they are pressed only for fifty minutes at a temperature below 29°C. This careful process allows us to obtain flawless olive juice with excellent taste and aroma, characteristics that are verified by means of analyses to which the extra virgin olive oils are subjected.
